Keto Chocolate Covered Coconut Squares

This is a quick and easy dessert especially when you are craving a low carb/keto dessert.
Canadian winters are a good time to try out a ketogenic or low-carb diet based on the seasonal availability of foods (aka minimal fruits and vegetables growing). Although coconut and chocolate are definitely not seasonally appropriate foods in the winter (or really ever if you live in Canada), a little indulgence is good for the soul.

Ingredients
  

Coconut Base

  • 1 cup Shredded coconut flakes
  • 2 tbsp Chia seeds
  • 2 tbsp Almond butter
  • 1 tbsp Coconut oil
  • 10 drops Monk fruit *You can use honey or maple syrup if you aren’t aiming for low carb/keto - 1/4 cup of either
  • 2 pinches Natural salt Redmond real salt, celtic sea salt, himalayan pink all good choices

Chocolate Topping

  • 1/4 cup Coconut oil
  • 1/4 cup Cocoa powder
  • 1 pinch Natural salt
  • 10 drops Monk fruit *You can use honey or maple syrup if you aren’t aiming for low carb/keto - 2 tbsp of either

Instructions
 

Coconut Base

  • Mix in all ingredients in food processor
  • Add liquid (coconut milk or oil) if mix is too dry
  • Lay mixture onto plate and place in freezer for 20 minutes

Chocolate Topping

  • Melt coconut oil on very low in small pan
  • Slowly mix in cocoa powder and monk fruit
  • Once melted and mixed, drizzle chocolate “sauce” over your frozen coconut goodness and let it solidify at in the fridge for 10 minutes
  • ENJOY!
